This quinoa and black bean salad is not only gluten-free but also packed with protein and flavor!

Ingredients:

  • 1 cup quinoa, cooked
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1/2 cup corn (fresh or frozen)
  • 1/4 cup chopped cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine cooked quinoa, black beans, bell pepper, corn, and cilantro.
  2. Drizzle lime juice over the salad and season with salt and pepper.
